Mini Cupcake Brownies Vegan Gluten Free Soy Peaswirl Dairy Desserts

Using an electric mixer beat two eight-ounce packages of lactose free cream cheese two tablespoons granulated sugar ¼ cup granulated sugar substitute one teaspoon vanilla 2 tablespoons grated lemon peel and 2 tablespoons lemon juice. Mix to combine the ingredients scraping the sides of the bowl as necessary.

Once these ingredients are well-blended add two egg whites one at a time. After each addition mix the batter only until blended. Over-mixing can cause the batter to become too thin. Pour the mixture over the almonds and drop small spoonfuls of low sugar strawberry preserves over the batter using a total of two tablespoons. Use more preserves for a fruitier bar if desired. If this alteration is made make a note of it on the recipe for future reference. Swirl the preserves with a knife a few times to create a marbled effect on the bar. Bake the dessert for 25 to 30 minutes or until the center of it is nearly set. Cool the dessert completely and then refrigerate it for a minimum of three hours to overnight. To serve cut to create at least 12 bars and store any leftovers in the refrigerator.
