Line an 8-inch square baking pan with foil and spray the foil with cooking spray. Sprinkle ½ cup of ground almonds evenly onto the bottom of the pan. Using an electric mixer beat two eight-ounce packages of lactose free cream cheese two tablespoons granulated sugar ¼ cup granulated sugar substitute one teaspoon vanilla 2 tablespoons grated lemon peel and 2 tablespoons lemon juice. Mix to combine the ingredients scraping the sides of the bowl as necessary.
